Homemade tomato soup with grilled cheese dippers, please tell me what is better. I found this recipe a while ago in Food and Wine magazine, and it has been my go-to ever since.
Dunk it in and now I am hungry.
Heat up dutch oven with butter and olive oil. Sauté onions until translucent, add smashed garlic and cook until fragrant, 30-40 seconds. Add in tomatoes, crushed red pepper, oregano, bay leaf, and salt & pepper.
Once the smell is too delicious it is unbearable, add in canned tomatoes and water.
Looking good gorgeous, now it’s time for the heavy cream and some more seasoning. Everything always needs more salt and freshly ground black pepper.
Lid on, reduce heat to low and simmer for 20-30 minutes. I was doing a yoga video so actually I let it go for a whole hour, but honestly, it didn’t hurt. The set it and forget it once again prevails in my dutch oven.
Blend in batches. Be extra careful because it tends to kick up with the heat. Few slow initial pulses should do the trick. I like mine on the chunky side, so I only blend for a hot second, but do as you please.
Time to get your grilled cheese going. Here I used Kerrygold from Costco, grilled with some extra buttery (also Costco) bread. Ok I love Costco.
Cut into little dippers.
